How to create a summer menu without meat?

In recent years, many people have wanted to reduce their consumption of meat products. What's better than hummus to start a meal? The recipe is easy to prepare and, moreover, it is an unsuspected source of protein. Indeed, cooked chickpeas contain more than 8 g of protein per 100 g, which is not negligible.
Furthermore, since it's summer, we offer you an original hummus with a seasonal product: peppers. Pre-roasted in the oven, it gives the recipe a grilled and slightly sweet flavour. A delight.

As a dish, we suggest you revisit the stuffed cherry tomatoes in a vegetarian version. Instead of the traditional stuffing of minced meat, they are stuffed with Carnaroli Riserva San Massimo rice with onions and tomato puree. Fresh herbs and feta will finally complete the recipe.
Also be sure to choose a suitable variety of tomato. If cherry tomatoes are perfect for an appetizer, and San Marzano are the queen of sauces but unfortunately they are not suitable for this recipe. We advise you to use vine tomatoes or ribbed tomatoes. Just be careful not to choose them too ripe, because they could release too much water and crumble during cooking.

To finish the meal, no difficulty on the horizon as it is rare to have a steak for dessert! The only drawback to avoid is to avoid offering fruit, if the appetizer and main course already contain vegetables.
